Lazy Sun afternoons with Mom when I was a teenager




I remember a few Sunday afternoons where everyone was gone but me and Mom. Dad would go check the buildings (they cleaned on Fri evening and Sat. but Dad ALWAYS checked on Sun just in case someone had worked over the weekend) he wanted the offices perfectly clean on Mon. mornings. Mom and I would make Tuna Noodle Casserole and watch The Twight Light Zone on TV.  It was a very special time for me.


Mom's Tuna Noodle and Mushroom Soup Casserole

8  Large Servings (remember this serves 6 kids and 2 parents-although I do not think we could get Dad to eat this stuff!) so if you use this recipe cut in half!

Cook until tender:
4 cups noodles

Drain -Pour 6 cupfuls of cold water over them. Drain them again. Drain the contents of:
2 cans tuna fish: 7 oz.

Separate it with a fork into large flakes. Be careful not to mince it as that isn't nearly as good. Grease an oven-proof dish. Arrange a layer of noodles, then sprinkle it with fish and so on. Have noodles on top. Pour over this mixture the contents of:

2 cans condensed mushroom soup: 10 and one-half ounces

2  cups canned peas drained

1 & 1/2 cups of  milk

Cover the top with:
Buttered white day old bread slices-break in pieces

Bake the dish in a hot oven (450 degrees) until the top is brown.

Then go watch old Twlight Light TV shows!
